Getting Ready to Cook

First things first, it’s important to gather all of the necessary ingredients and equipment for this recipe. For the vegetables, you will need 2 pounds of fresh green beans, trimmed and cut into bite-size pieces. You will also need 1 medium onion, finely chopped, and 2 garlic cloves, minced.

Next, for the meaty flavor, you will need a meaty piece such as a ham hock or smoked ham. This time around, we will be using ham hocks to provide that smokey flavor for this recipe. If ham hocks are hard to find in your area, don’t worry; you can substitute it with country ham or turkey tails.

Cooking the Vegetables

Start by heating a few tablespoons of olive oil in a large pot or Dutch oven over medium heat. Once hot, add the onion and garlic, then cook them until they start to soften and become fragrant. Carefully add in the ham hocks and allow them to cook until they start to brown on all sides.

Now is the time to add enough water to cover the ham hocks completely. Bring the water to a boil then let it simmer until its fully cooked, stirring frequently.

After an hour of cooking the ham hock, remove it from the pot leaving just enough water cover the green beans and potatoes recipe ingredients.

Next, add green beans into the pot with enough water (around half an inch) over medium-high heat. Let the beans cook until soft (but still slightly crisp) – usually around 8-10 minutes – and then stir them occasionally. If needed so that your “meaty” profile stands out more strongly in your dish try adding a bit of bacon or country ham at this stage.

If needed combine potatoes with green beans in order to cook them both at once.

Adding Finishing Touches

Once the green beans are fully cooked and tender, stir in 1 teaspoon of salt, 1 teaspoon of sugar, 1/2 teaspoon of cayenne pepper, and a handful of finely chopped parsley.

Stir everything together until it is all evenly distributed before removing it from heat.

To start off, give your beans a good wash and cut off the stems using a pair of kitchen shears. Once you’re done with that, rinse them in a colander while running them under cool water.

Once the beans are chilled, take them out of the ice bath and let them dry. Lay them on a kitchen towel, or better yet, some paper towels to absorb any remaining moisture. Lastly, they are ready to be enjoyed in your dish of choice!

Southern Green Beans, Ham & Potatoes Recipe

I love homemade ham & green beans with potatoes, served with a skillet of cornbread and sweet tea! For this recipe, I took two "soul-food" recipes I had and combined them to come up with this one. It's just the way I like it. You can adjust the amounts of ingredients to your own taste. If I use ham hocks, I usually only add one or two slices of bacon for added flavor, just because I like bacon flavor. But if I don't have ham hocks, I use 4- 6 slices of bacon.
